Mama Membership Recipe: Collagen Pancake

This recipe is full of protein, whole grains and fibre… all the things you need from your breakfast to ensure your belly is full and your blood sugar is stable.⁠

Ingrdients

  • 1/4 cup buckwheat flour (available from supermarkets)⁠

  • 1 egg⁠

  • 1/8 cup almond milk⁠

  • Pinch baking powder⁠

  • 1 heaped tablespoon of collagen powder (we love @gelproaustralia)⁠

  • Fruit of choice (Example: a small banana and handful of organic frozen berries)⁠

  • 2 spoonfuls coconut yoghurt (I used @coyo_organic

  • Sprinkle hemp seeds⁠

  • Drizzle of honey⁠

Method

  1. Whisk your egg and milk together in a small bowl.

  2. Add in your dry ingredients - buckwheat flour, baking powder and collagen powder. Mix thoroughly until the batter is smooth.⁠

  3. Cook for a couple of minutes each side on medium heat.⁠

  4. Top with fruit, coconut yoghurt, hemp and honey!⁠

You can really top this pancake with whatever you like, but our team like to opt for some kind of healthy fat. Here we’ve added coconut yoghurt which acts as a source of fat, plus hemp seeds. Unlike most pancake recipes, the only sweet ingredients in this are the fresh fruit and drizzle of honey, meaning it’s not overly sweet and won’t mess with your blood sugar.⁠
